I cleaned the carbs on my 81 Suzuki GS550t, put it all back together, and now it idles at 5000 rpms?

if you are running lean it will be your intake manifolds. those are the rubber boots connecting the carbs to the head.make cyure the carbs are properly seated inside them and that the bands[clamps] are very tight.
